Pork Stir Fry

I’m using the Ninja Foodi for more and more of my meals, which means I am having to rearrange recipes to suit the one pot cooking. It is actually easier than it might seem. This is adapted from a stir-fry recipe by Mindful Chef.

Pork Stir Fry

Ingredients

  • 2 garlic clove
  • 4 cm fresh ginger
  • 2 tsp honey
  • 80 g mangetout
  • 100 g noodles
  • 1 red pepper
  • 300 g pork mince
  • 2 tbsp rice wine vinegar
  • 80 g baby sweetcorn
  • 2 tbsp soy sauce

Instructions

Prepare Noodles

  • Use either straight-to-wok noodles, or dried noodles. Straight-to-wok are ready to use. If using dried, submerge in bowl of freshly boiled water for about 10 minutes, then drain and rinse. Or follow packet instructions, if different,

Cook Stirfry

  • Core the pepper and thinly slice. Finely chop or crush the garlic. Finely slice the ginger. Cut mangetout and sweetcorn in half lengthways.
  • Add oil to the Foodi and bring to medium high heat on Saute mode. Fry the pork for 4-5 mins, until golden and cooked through. When done, remove from Foodi and set aside.
  • The dressing: mix the vinegar, soy and honey together, stirred well.
  • Add more oil to the Foodi, still on medium high heat on Saute mode. Add the vegetables, garlic and ginger, and stir-fry for 2-3 mins. Return the pork to the pan, and stir into the vegetables, then add the noodles and dressing. Keep stiring until everything is heated through. Season to taste.
