I was making a dressing for some salad leaves this lunchtime, and found that – apart from a couple of spray bottles – I was out of oil.

Fortunately, tomorrow is an Ocado day, I still have time to add to my shopping list.

But as for the dressing – I went ahead without the oil, and was really happy with what I ended up with. I’ll probably make all my honey-mustard this way in future.

Oil-free Honey Mustard Dressing

Course: Salad

Ingredients

  • cider vinegar
  • clear honey
  • mustard powder

Instructions

  • Mix equal parts of cider vinegar and honey in a cup or small jug. Whisk with a fork, until combined.
  • Add mustard powder, a little at a time, starting at about half a teaspoon. Whisk each time, until the dressing is slightly thickened.
