Christmas Dinner for the Single Man

I’ll be dining alone this year, but don’t see why I shouldn’t do it in style.

One of the things about getting a roast right is making sure everything is ready at the same time. This year, I am doing everything – everything – in the oven, which should make life simpler.

The turkey has just gone on. It is a stuffed leg from Riverfords. At 1.3kg, I should get at least a couple of meals out of it, and it needs 90 minutes a low oven. After 45 minutes, it will be joined by my potatoes, par-boiled first and slathered in goose far, and also parsnips. Both of these need to be cooked for a further 45 minutes.

But also going in the oven are my sprouts. I am oven roasting them with bacon lardons, for flavour. Doing them in the oven like this, they will also take about 45 minutes.

When the turkey comes out to rest, the parsnips will get two spoons of honey, and a good stir, and the sprouts a sprinking of breadcrumbs and parmesan then both back in the top of the oven for 10 minutes.
