Pulled Pork Biscuits
A great way of using up leftover pulled pork – if you ever have any, that is!
Pulled Pork Biscuits
Ingredients
- 1 cup cornmeal
- 2/3 cup water
- 1 egg
- 2 tbsp butter
- 1 cup cheddar cheese
- 3/4 tsp salt
- 1/4 tsp cayenne pepper
- 1/2 tsp cracked black pepper
- 1 tsp sugar
- 1 tsp baking powder
- 1/2 cup flour
- BBQ Pulled Pork (pre cooked)
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Mix cornmeal, flour, baking powder, sugar, salt, cayenne and black pepper in a mixing bowl. Stir in cheese.
- In a separate bowl whisk the butter, egg and water together. Add to the cornmeal mixture a bit at a time and stir until dough forms.
- Place spoonfuls of dough on a baking sheet and flatten with a fork. Top with pulled pork, and cover with more dough.
- Bake for 12-14 minutes.
- Optional - after baking, top with more cheddar cheese, and bacon bits. Return to oven and bake until cheese melts
