Back in January, I posted about buying Dominos pizza using their lunchtime 2-for-1 deal; eating a slice or two, then freezing the rest. This gives me a choice of pizza on hand, easily (and tastily) reheated, for £1 a slice.

I became aware that many people use the CSG in a normal BBQ, and decided to give it a try. But I never did. I use a pellet grill, which would be switched off during this process (we are talking COLD smoking). The cardboard box was a vertical arrangement with ventilation by the tray and out the top. Would my pellet grill, which is more of a horizontal thing, have the same ventilation to keep the CSG smouldering? Should I enable the grill’s fan, or would that be too much?

People are worried about nitrites in food. By “people”, I mean article-writing doctors, and tabloid newspapers. It’s become a fairly repeated thing that the presence of nitrites in foods such as bacon, ham and pastrami can lead to an increased risk of cancer. This isn’t just an old wives’ tale – there has been research into it and everything. At the same time, I am not losing any sleep on the matter – even as someone who loves cured meats, my level of consumption is such that I risk more crossing the road to the supermarket to buy it.

Popped into a friend’s today, for a cuppa and a chat. On the way home, I had time on my hands, so I drove into Sleaford, to the Design and Craft Centre there – I’ve driven past the signs many times, and always wondered what it was. It was interesting, but not what I am posting about.

The Christmas Duck

I bought a duck for Christmas, it was oven prepared and looked great. The instructions were to roast it at 180℃ (350℉) for an hour and forty-five minutes. I decided to cook it in my pellet grill at a lower initial temperature – 82℃ (180℉) – to give it some smoke, before turning up the heat for about an hour and a half, in order to crisp it.

In the New Year, I’m going to make a new effort, reschedule veg deliveries with Riverford and reacquaint myself with the local excellent butcher. Not to mention getting the vegetable garden going again.

New Toy: Lavazza Favola Plus Coffee Pod Machine

Over the past few months, my Modo Mio pod coffee machine developed a leak. Not a “water all over the place” leak, but a creeping “more water leaking into the drip tray than through the coffee pod” thing. This started off being simply a chore, that I had to empty the drip tray more often, but it is now affecting the pressure, and the quality of the coffee.

The Great British Cheese Company

Now, I like cheese. However, I’m not usually a fan of adulterated cheeses – you can keep your white Stilton with cranberries, or Wensleydale with apricots, or whatever the latest way to ruin a good cheese is. I like my cheese to taste of cheese, and nothing else. Having said that, I was pleasantly surprised during a visit to the South of England Show at Ardingly the other week, where I found a cheese company who know how to add flavour to their cheese!
