Pulled Pork Biscuits

A great way of using up leftover pulled pork – if you ever have any, that is!

  • 1 cup cornmeal
  • 0.66666666666667 cup water
  • 1 egg
  • 2 tbsp butter
  • 1 cup cheddar cheese
  • 0.75 tsp salt
  • 0.125 tsp cayenne pepper
  • 0.25 tsp cracked black pepper
  • 1 tsp sugar
  • 1 tsp baking powder
  • 0.5 cup flour
  • BBQ Pulled Pork (pre cooked)
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Mix cornmeal, flour, baking powder, sugar, salt, cayenne and black pepper in a mixing bowl. Stir in cheese.
  3. In a separate bowl whisk the butter, egg and water together. Add to the cornmeal mixture a bit at a time and stir until dough forms.
  4. Place spoonfuls of dough on a baking sheet and flatten with a fork. Top with pulled pork, and cover with more dough.
  5. Bake for 12-14 minutes.
  6. Optional - after baking, top with more cheddar cheese, and bacon bits. Return to oven and bake until cheese melts
