Hot Cross Bread & Butter Pudding

Easter is here, and if you buy/make too many hot cross buns, you may find them going a little stale by the end of the weekend. Don’t throw them away – they make a great bread and butter pudding.

Just slice the buns and butter them, then layer them in a pie dish or similar. Use the halves with the cross for the top. Then make an egg custard, pour over, and leave for 30-60 minutes, for the custard to soak in. Then bake in a medium oven for 30-40 minutes.

What the heck – why not buy an extra pack of buns, just to let them go stale!
